Why music sounds so different on headphones compared to loudspeakers?

Lots of factors in play in why music sounds different through speakers and headphones. Room acoustics play a big part in how sound is heard after it reaches your ears. Does that mean that headphones give you a "truer" sound absolutely not! Given there are so many other factors in play. Headphones themselves can color the sound and so can the source.
