Where is the best place to find tutorials on setting up and using Room Simulation in REW?
 
The help covers the basics of using it. Assuming your room is predominantly rectangular the main uncertainty will be appropriate values for the surface absorptions, but the defaults are fine for exploring potential placements for speaker/sub and listening positions.
 
The link you offer tells me how to set it up. However, I see no explanation about how to interpret the results. Namely, do I care about every single dip and peak, or only the ones where several dips and peaks come together? And do I continue to move me and the speakers around until I have as few dips and peaks as possible?
 
Broadly speaking, the more even the response the better, and peaks are easier to deal with than dips if EQ is an option.
